Test, Learn, Improve, Repeat: Holyrood Distillery

PRE-SPRING ‘24

Nestled in the heart of Edinburgh, Holyrood Distillery unites traditional methods of distilling whisky while incorporating a modern and innovative approach to creating Scotland’s most famous export.

“It’ll have been ten years from the start of this idea to our first whisky coming on to the market. It takes a long time. That’s the industry though, quiet and careful maturation in many ways. You’ve got to be patient.”

Rob Carpenter, Co-Founder

TEST, LEARN, IMPROVE, REPEAT

“It's a great motto for the business and frankly, for life. We should all be lifelong learners and trying to improve as we go along.”

Rob Carpenter, Co-Founder

A SPARK TO IGNITE THE GOOD TIMES

“Most people around the world will have a great story linked to a time they were drinking with friends, family members, or loved ones. We're sort of giving them the spark to ignite the good times, that's the thing I find most rewarding.”

Calum Rae, Assistant Distillery Manager

DRINK WHISKY YOUR WAY

“Start with a peated smoky whiskey and a non-peated one, and whichever jumps out at you, go from there. It's really part of the fun with whiskey is when you find a flavor you like, you can delve deeper. Different amounts of water can completely change the flavor, so it’s worth experimenting with that as well. Don’t worry about age statements and what people tell you though. Go with your gut. That’s what I’d say.“

Calum Rae, Assistant Distillery Manager

EDINBURGH'S LOCAL DISTILLERY

“We want people in Edinburgh to be proud of the fact that there’s a distillery here. It's nice that we can put down something that has longevity. I think that's the key thing for what whisky means in the community.”

Calum Rae, Assistant Distillery Manager
